Avocado Salsa Pasta Salad

 

Makes about 12 servings

 

Ingredients:

 

2 cups dry rotini pasta

1 cup chopped red onion

1 cup chopped green bell pepper

3 cups chopped tomato

1-6 ounce can sliced black olives, drained

1-4 ounce can chopped green chiles, drained

1 cup frozen corn, thawed

1 whole avocado, chopped

 

Dressing:

¼ cup white vinegar

¼ cup lime juice

¼ cup olive oil

1 Tablespoon white sugar

1 T chili powder

½ teaspoon garlic powder

1 tsp salt

¼ cup chopped fresh cilantro

 

Directions:

 
  1. In a large pot bring water to a boil, cook pasta until tender. Rinse with cold water to cool pasta or refrigerate.

  2. In a large bowl combine onion, bell pepper, tomato, black olives, green chiles, corn, and avocado. Stir in cold pasta. 

  3. In a separate bowl combine all dressing ingredients. Pour over pasta mixture and toss.

  4. Garnish with fresh cilantro.
