Healthier Chicken Parmesan

 

Makes about 6 servings

 

Ingredients:

 

6 boneless skinless chicken breasts

2 T flour

4 large egg whites

2 cups panko bread crumbs
1/2 cup parmesan cheese
1/4 cup olive oil

1 cup marinara sauce

3 oz fresh mozzarella
1/4 cup fresh basil, chopped

salt & pepper to taste

 

Directions:
 
  1. Preheat oven to 450 degrees.

  2. Place chicken breasts in 1 gallon Ziploc bag (do not seal). Pound chicken to a thickness of a 1/2 inch.

  3. Season chicken with salt and pepper.

  4. Beat eggs in a shallow dish.

  5. In a separate bowl mix panko bread crumbs and 1/4 cup parmesan cheese.

  6. Dredge seasoned chicken breasts in flour, then egg, and then bread crumb mixture.

  7. Heat olive oil in a large skillet on medium-high heat. Place breaded chicken breasts into hot oil and cook 2 minutes on each side, until crumbs are golden brown (chicken will finish cooking in oven).

  8. Place chicken breasts into 9x13 baking dish. Top each chicken breast with 3 T marinara sauce and a 1/2 ounce of fresh mozzarella. Sprinkle remaining 1/4 cup parmesan cheese and chopped fresh basil over chicken.

  9. Bake in preheated oven for 15-20 minutes, or until chicken is no longer pink in the center.
