Pumpkin Cheesecake Parfait

 

Makes 6 parfaits

 

Ingredients:

 

12 ginger snap cookies, crushed into crumbs
8 ounces cream cheese, softened
1 cup pumpkin puree
1 teaspoon pure vanilla extract
1/2 cup sugar
2 teaspoons pumpkin pie spice
Reddi-wip real cream whipped topping (sugar free optional)

 

Directions:
 
  1. In a large bowl with an electric mixer, beat cream cheese until smooth.

  2. Add pumpkin puree, vanilla extract, sugar and pumpkin pie spice. Mix until well combined.

  3. In individual parfait dishes, add a layer of ginger snap cookie crumbs, then a layer of pumpkin cream cheese mixture, followed by a layer of whipped topping. Repeat once.

  4. Garnish with pumpkin pie spice.
