Skinny Cheeseburger Casserole

 

Makes about 8 servings

 

Ingredients:

 

1 lb 96% lean ground beef

1 lb box elbow macaroni (or your choice pasta)

1 can Rotel

1-3/4 cup reduced fat shredded cheddar cheese

1-1/4 cup ketchup

2 T yellow mustard

salt and pepper to taste

 

 

Directions:
 
  1. Preheat oven to 350 degrees.

  2. In a large pot cook elbow macaroni according to package instructions. Drain and set aside.

  3. In a large frying pan cook your ground beef until browned. Drain fat and return ground beef to pan.

  4. Add ketchup,mustard, and 3/4 cup reduced fat shredded cheese to ground beef and mix together.

  5. In a 9x13 baking dish layer pasta, remaining reduced fat shredded cheese, then ground beef mixture and bake for 20 minutes, or until cheese is melted.

  6. Serve in small bowls.
