Black Bean and Corn Salsa

Fresh, colorful, and bursting with flavor—perfect as a dip, topping, or side.

Makes about 42 servings
Ingredients:
2 (15 oz) cans black beans, drained and rinsed
2 (16 oz) packages frozen corn
1 red onion, finely chopped
1 red bell pepper, seeded and chopped
1 green bell pepper, seeded and chopped
1 T fresh garlic, minced
1 bunch fresh cilantro, finely chopped
1/4 cup lime juice
1 pinch ground cumin
salt and pepper to taste
Optional ingredients:
1 jalapeno pepper, seeded and minced
1 fresh mango, chopped
1 fresh avocado, chopped
2 fresh tomatoes, chopped
Directions:
In a large bowl combine all ingredients and let set for at least 2 hours before serving.
