Chili Lime Shrimp Skewers

Zesty, smoky, and fast—these shrimp skewers bring big flavor with minimal effort.

Makes about 4 servings
Ingredients:
Marinade:
Juice from 1 lime
1 Tablespoon olive oil
1 Tablespoon Cajun seasoning
1 Tablespoon coarsely chopped fresh cilantro
1 pound peeled, deveined large shrimp (26-30 shrimp per pound)
Skewers
Directions:
In a large ziploc bag combine lime juice, olive oil, cajun seasoning, and cilantro.
Place shrimp in bag, shake to coat. Refrigerate for 2 hours.
Preheat the grill. Thread 4 large shrimp onto each skewer.
Lightly oil grill grate. Grill shrimp for 2 minutes on each side or until pink on the outside and cooked through.
