Cranberry Orange Zest Bread

Bright citrus and tart cranberries baked into a perfectly tender loaf.

Makes 24 Slices

Ingredients:

2 cups all-purpose flour

1 cup granulated sugar

Finely grated zest of 1 medium orange

1 1/2 teaspoons baking powder

1 teaspoon fine salt

1/2 teaspoon baking soda

3/4 cup freshly squeezed orange juice (from about 2 medium oranges)

2 tablespoons light butter, melted

2 egg whites, lightly beaten

1 teaspoon vanilla extract

1 1/2 cups cranberries, thawed if frozen and sliced in half

Cooking spray

Directions:

  1. Preheat oven to 350°.

  2. In a large mixing bowl combine the flour, sugar, orange zest, baking powder, salt, and baking soda. Whisk together.

  3. Add the orange juice, melted butter, egg whites, and vanilla and stir with a spoon or rubber spatula until well combined.

  4. Pour in cranberries and fold into mixture, evenly.

  5. Prep loaf pan with cooking spray. Pour batter into loaf pan, using spoon or spatula to spread evenly within, smoothing the top.

  6. Bake for 45 minutes or until toothpick inserted in center comes out clean.

  7. Remove from oven when finished and let cool in pan for 15 minutes. 

  8. Remove Cranberry bread from pan and let cool completely.

  9. Slice and serve.
