Pumpkin Bread

Moist, warmly spiced, and perfect with coffee—or straight from the pan.


Makes 24 slices 

Ingredients:

1 (15 ounce) can pumpkin puree

1⁄2 cup nonfat sour cream

2 whole eggs 

4 egg whites

1/2 cup vegetable oil

1/2 cup unsweetened applesauce

2 teaspoons vanilla

1/3 cup water

2 cups white sugar

3 1/2 cups all-purpose flour

2 teaspoons baking soda

1 1/2 teaspoons salt

2 Tablespoons pumpkin pie spice

Directions:

  1. Preheat oven to 350°.

  2. In a small mixing bowl combine the flour, baking soda, pumpkin pie spice, and salt.

  3. In a large mixing bowl, combine oil, applesauce, vanilla, and water.

  4. Slowly mix dry ingredients into wet ingredients.

  5. In a separate bowl beat eggs, egg whites, pumpkin puree and sugar until well mixed.

  6. Alternate pouring pumpkin mixture and nonfat sour cream into large mixing bowl with other ingredients.

  7. Mix all ingredients thoroughly.

  8. Prep two loaf pans by spraying with cooking spray and dusting with flour. Pour batter into loaf pans evenly and bake for 1 hour or until a toothpick inserted in center comes out clean.
