Pumpkin Cheesecake Parfait

Layers of creamy pumpkin cheesecake flavor in an easy, elegant dessert.

Makes 6 parfaits
Ingredients:
12 ginger snap cookies, crushed into crumbs
8 ounces cream cheese, softened
1 cup pumpkin puree
1 teaspoon pure vanilla extract
1/2 cup sugar
2 teaspoons pumpkin pie spice
Reddi-wip real cream whipped topping (sugar free optional)
Directions:
In a large bowl with an electric mixer, beat cream cheese until smooth.
Add pumpkin puree, vanilla extract, sugar and pumpkin pie spice. Mix until well combined.
In individual parfait dishes, add a layer of ginger snap cookie crumbs, then a layer of pumpkin cream cheese mixture, followed by a layer of whipped topping. Repeat once.
Garnish with pumpkin pie spice.
