Roasted Root Vegetable Medley

Simple roasted vegetables that bring out natural sweetness and deep flavor.

Makes 9 servings (1 cup each)

Ingredients:

2 medium beets, peeled, chopped

3 medium carrots, peeled, chopped

2 large turnips, peeled, chopped

1 sweet potato, peeled, chopped

1 yellow onion, cut into 8 wedges

2 Tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon fresh rosemary

Directions:

  1. Preheat oven to 400 degrees.

  2. In a large tupperware container, combine all ingredients, cover with lid and shake until all vegetables are thoroughly coated with oil.

  3. Pour into 9x13 baking dish. Bake for 45 minutes or until vegetables are tender.
