Spinach and Mushroom Scramble

Enjoy a savory spinach and mushroom scramble for a nutritious and delicious breakfast!

Makes about 2 servings

Ingredients:

8 large egg whites

1 large whole egg

1/4 cup skim milk

2 cups fresh spinach

1 cup mushrooms, chopped

1 tsp fresh garlic, minced

1 tsp olive oil

salt and pepper to taste (optional)

Directions:

  1. Heat olive oil in a large skillet over medium-high heat. Saute mushrooms until tender, add garlic and spinach. Saute until spinach wilts.

  2. In a small bowl beat egg,egg whites, and milk. Add egg mixture to mushrooms and spinach. Cook until eggs are set.

  3. Season with salt and pepper.
