Turkey and Wild Rice Soup

A wholesome, filling soup that’s comforting without being heavy.

Makes 18 servings (1 cup each)
Ingredients:
8 cups turkey broth or stock
1 teaspoon salt
1/2 teaspoon black pepper
3 stalks celery with leaves, chopped
3 large carrots, chopped
1 medium onion, chopped
1 tablespoon fresh garlic, minced
1 teaspoon dried thyme
3 cups turkey meat, cooked, chopped
2 cups wild rice, cooked
Directions:
In a large pot, combine broth, salt, pepper, celery, carrots, onions, bell pepper, garlic and thyme. Bring to a boil and cook until vegetables are tender.
Stir cooked turkey and cooked rice into vegetable mixture. Reduce heat to low and cook for another 10 minutes.
Serve in individual bowls.
