Turkey and Wild Rice Soup

A wholesome, filling soup that’s comforting without being heavy.

Makes 18 servings (1 cup each)

Ingredients:

8 cups turkey broth or stock

1 teaspoon salt 

1/2 teaspoon black pepper

3 stalks celery with leaves, chopped

3 large carrots, chopped

1 medium onion, chopped

1 tablespoon fresh garlic, minced

1 teaspoon dried thyme

3 cups turkey meat, cooked, chopped

2 cups wild rice, cooked

Directions:

  1. In a large pot, combine broth, salt, pepper, celery, carrots, onions, bell pepper, garlic and thyme. Bring to a boil and cook until vegetables are tender.

  2. Stir cooked turkey and cooked rice into vegetable mixture. Reduce heat to low and cook for another 10 minutes.

  3. Serve in individual bowls.
